When an appointment is cancelled, it will disappear from the calendar.
However, all cancelled appointment are hidden on the Calendar 📅, you can easily reveal them by clicking on the View Cancelled tick box located on the left of the calendar page.

A cancelled appointment will forever be recorded as cancelled. You need to create a new appointment if the patient is ready to schedule.
Cancellation details like time stamp and the reason are recorded against the patient (or customer); the history can be used in for reporting and follow-ups.
